Description

Dunany Flour is grown, dried and milled on Dunany Organic Farm in Co Louth by the Workman Family. It’s a 100% Irish product and is free of artificial chemicals and pesticides.

This soft wholemeal plain wheat flour makes great pastry and will really soften up the crumb of any sourdough loaf when blended with other strong flours. We’d recommend blending up to 40% of Dunany Stoneground Wholemeal (fine) Wheat Flour as a blend with Shipton Mill Strong Flour.

Dunany use stone mills that preserve more nutrients and flavour in the flour. The stone mills move more slowly than industrial roller mills and this helps to keep the flour cooler during the milling process. The stone milling process grinds the whole grain berries together, incorporating the oils and bran from the grain into the flour. A stone mill produces a less refined flour than an industrial mill but stoneground flour has greater flavour and nutritional value.
